Peanut Butter Energy Bites (No Bake!)
This is the perfect on-the-go snack that is a favorite in our family! Our kids love making them (and eating them!) and require no baking. These can be made with just about any nut butter and protein powder flavor. Our favorite is Strawberry Banana Daily Sunshine, but chocolate and vanilla works too! Feel free to add honey for extra sweetness.
Makes about 20 balls
Ingredients
– 1 cup rolled oats
– 1 cup peanut butter
– 1/4 cup coconut oil
– 1 scoop protein powder
– 1/2 cup chocolate chips
– 1 tsp chia seeds
Directions
Mix all ingredients together in a large mixing bowl. Cover and let chill in the refrigerator for an hour. Once chilled, roll into balls using a cookie scoop or your hand. Refrigerate for up to a week in an airtight container.
